It's frozen yogurt day today, and how appropriate is that?
Our weather is finally cooperating here in the lovely wild and wonderful West Virginia, after all, and the heat is somewhat nice after all of the snow and cold and rain we've had.
To celebrate today, we're posting a recipe for homemade frozen yogurt that's as versatile as most of our recipes. If you don't want to make your own, there are plenty of lovely frozen yogurt shops popping up all over WV worth checking out.
This recipe only requires a food processor, but can be adapted to use an ice cream maker if you've got one.
1.5 cups unsweetened yogurt (Greek or plain, but add a splash of lemon juice if plain) 1/2-1/3 cups fine sugar (or honey, or caramel - all to taste) 2 cups of your favorite frozen fruit (we like bananas or blueberries or strawberries - or all three!) 1 tsp of vanilla extract A few scrapings of a vanilla bean (optional, of course)
Blend it all together in your processor until smooth, and then store it for about an hour before serving. Then, viola! A healthy, delicious snack at home to beat off this hot weather. Top it as desired - with fresh fruit, chocolate or sprinkles - and enjoy.
